Is it permitted to filter water on Shabbos?

What is the answer of the Gemara of בין הגתות

Why does it matter that people drink the wine with the sediments? Why should that permit one to filter out the sediments if he personally does not want the sediments in his wine? How is this different from a person who has a mixture of two food items and one of them he does not want to eat now – whihc is forn=biden for him to separate as the one he does not want is considered – bad-‘ pesoles -waste?
